Celery Root Juice Takes Its Turn in the Spotlight

 

You have likely seen mentions of Celery Juice in the news lately. Celery has been used as a medicinal plant since ancient times. Tradition has it that the ancient Egyptians as well as the Romans and Greeks recognized its properties. Over the centuries, knowledge of the beneficial effects of the celery plant was lost, and until only recently the vegetable was used mainly for cooking.

Health benefits can be derived not only from celery stalks but also from celery root, commonly called celeriac. The nutrients offered by the two parts of the plant are quite similar.

Both celeriac and celery stalks contain the essential oils limonene and selenium, which are primarily responsible for the aromatic taste. They also have many health-promoting properties, acting as an expectorant, a cholagogue (stimulating the flow of bile from the gall bladder) and a diuretic. The oils inhibit harmful bacteria and fungi in the stomach and intestines and disinfect the mucous membranes in the mouth and throat.

Decanting Creates Better Quality

One of the key steps in the production of Biotta Juices is decanting. After the raw materials have been crushed in the mill, they are transferred to the ultra-modern decanter as so-called mash.

The decanter separates solids from juice using centrifugal force. Since the solids have a higher density, they collect on the walls of the drum. These solids, now called pomace, are picked up by farmers from the region who use it as livestock feed.

Meanwhile, the juice flows off at the other end of the decanter and is pumped directly to the bottling system. This gentle decanting process makes it possible to obtain juice of particularly high quality.

In contrast to traditional juice pressing, which is a slower process using pressure, decanting does not allow oxygen to enter. Moreover, decanting is a continuous and fast juicing process that preserves the valuable components of the raw materials.

Harvest Time

It's our favorite time of year - harvest season! Most of the organic vegetables used in Biotta Juices are sourced from the region around the Biotta factory, on the south shore of Lake Constance in Switzerland.

This year we  expect an excellent vegetable harvest, as the summer of 2019 provided high temperatures alternating with rain showers that lasted several days, ideal for irrigating the plants.
