French Onion Soup
Yields 8 servings
Ingredients
3 tablespoons olive oil
8 cups sliced yellow onions
1 bay leaf
2 sprigs thyme
1/2 cup sherry
8 cups chicken stock
1 1/2 teaspoons beef base
Pepper to taste
1 tablespoon soy sauce
Bread croutons
16 slices imported Swiss cheese
Parmesan, grated
Heat olive oil in a Dutch oven over high heat. Add onions and stir for about 15-20 minutes until golden brown. Add bay leaf, thyme, sherry, chicken stock, beef base, pepper, and soy sauce.
Bring to a boil. Reduce heat to medium and simmer for 30-40 minutes. Set oven broiler to high.
Pour soup into 8 individual ramekins, filling to the top. Add croutons on top to cover, about 4 each. Layer 2 slices of Swiss cheese on top of each ramekin. Sprinkle Parmesan on top of Swiss cheese. Place under broiler for 1-2 minutes. Bon Appétit!
