Hello Friends! 

In North Texas, where we live, the temperatures have finally started to cool down, especially in the early mornings and evenings. 

Morning walks are no longer dreaded, we can finally enjoy al fresco dining again and it’s time for our first fire in the fireplace and campfires at our Southern Oklahoma ‘barndominium’.   A time for savored roasts whether beef, pork or fowl, long-simmering soups on the stove and baked pumpkin everything!  I honestly look forward to October all year long with eager anticipation.

For a simple and elegant fall dessert, add a few scoops of premium vanilla ice cream to a beautiful bowl and sprinkle our walnuts over the top-- no fudge or caramel sauce required!

They are lovely added to your favorite pumpkin quick bread or muffin recipe, as well as on top of pancakes. 

They are a welcome snack at your football gatherings and equally at home at an elegant cocktail party.

I developed the Southwest Soul Coffee Rub because I was looking for something to add a depth of richness and caramelization to roasted, grilled or pan-seared meats, chicken, etc.  

All of the recipes I found were filled with so many ingredients it boggled the mind. 

What I came up with is a very simple, consistently good rub that is equally delicious on seafood as it is on a good rib-eye steak.  The key is to use it sparingly.  It takes only a light dusting, rubbed into whatever you’re using it on, shortly before cooking.  

In a Texas twist, meaning-- NOT beef,  I decided to share with you my recipe for Southwest Soul Rubbed Salmon with Sriracha Aioli. 

Salmon really stands up to the subtle richness of this rub and the rub also cuts that sometimes overpowering salmon thing (as my husband would say).  It is so easy to prepare and fabulous enough for company. 



Side Note:  If you’re not a coffee fan, no worries. Though the rub smells of coffee when you open it, you will not taste coffee on your finished product.  You can also change up the rub by adding cumin, garlic powder, etc., if you like but trust me when I say, it’s not necessary. 

ENJOY ENJOY ENJOY this beautiful season with your family and friends. Make some old-timey caramel apples for the kiddos. Bake up some warm pumpkin bread to share with grandma & grandpa.  Put a roast in the oven, not the instant-pot….and savor the aroma that fills your home all afternoon.  Whatever you do though, take some time for yourself whether on a morning walk or evening stroll, to soak up the beauty of October.   

It is indeed, a gift.
