Kellie's Roasted Jalapeño Cashew Dip

We recently visited with my step-mom Tracy while on tour and were all wild about this dip she had made- it's similar in texture to hummus but a lot more flavorful.  She shared the recipe with me and I decided to have a little fun with it.  One word of note is that jalapeños can taste like a bell pepper or can really light you up, so try them first before deciding to keep or discard the seeds.

1 1/4 cup roasted salted cashews
1/3 cup packed chopped cilantro
2 T canola or mild tasting oil
3 garlic cloves
2 T soy sauce or tamari
2 tsp. brown sugar
3 jalapeños, fire roasted, stems removed
2 T lime juice
black pepper to taste

1. Turn up the flames to medium on a gas stove top and using tongs, rotate the jalapeño over the flame until the skin is blistered and blackened.  Place in a bowl and cover while you roast the others.  If you don't have a gas stove, you can use a broiler or a grill, or just use the jalapeños raw.
2. After the jalapeños have cooled and softened, around 15 min, use a fork to scrape off most of the blackened skin.
3.  Try a taste of the jalapeños and see how spicy they are- if they are spicy, remove and discard the seeds.
4.  Add all ingredients into a food processor and blend until everything is smooth and creamy.
5. Enjoy with crackers, bread, or cut vegetables.
