Northwest Forest Brine

Our Northwest Forest Brine infuses a range of flavors into all manner of meats, from trout to pork, chicken and turkey. Juniper is the leading flavor with notes of pine and citrus, complemented by fennel, green pepper and allspice. We added alderwood smoked salt into the mix and this 8 oz. package is perfectly portioned for one gallon of water.

Ghost Chile Pods

The ghost chile is a naturally occurring chile hybrid from the Assam region of Northeast India. Not only does ghost chile pack a wallop of heat - more than twice that of habanero - it has a rich flavor profile to go along with it. Hints of tomato and tamarind will come through with a wave of intense heat.

If you like intense heat, this is a fun chile to play with! Try ghost chile infused in tequila, popped in a pot of chili or to add pep to a sweet potato pie. Ghost chile also infuses nicely into honey where the sweet can counterpoint the heat.

Madagascar Vanilla Beans

These whole Madagascar Vanilla Beans are some of the finest available, and our stock is always fresh. Scrape out the seeds or dissolve them in liquor for use in baking, dessert sauces or as an aperitif. Try sinking several split beans into a jar of sugar, let stand for several weeks to create vanilla sugar and then use it in baking or simply sprinkle some on fresh berries with cream. Fabulous!

This Vietnamese black pepper is fresh off the boat and has a delightful flavor- peppery as pepper should be with a fresh bouquet on top. The world keeps getting smaller and our culinary choices keep expanding. This peppercorn from Vietnam has a sharp, lingering bite and a pronounced lemony nose, making it an excellent choice for vegetables or fish dishes.
