Heritage Breed |$12.99/lb
A heritage breeding stock, descended from indigenous Native American birds. Your turkey will be robust and full-flavored, with large, meaty legs & thighs.
Kelly Bronze Heritage Breed |$15.99/lb | 9-14 lb birds only
This rare, black-feathered heritage breed was rescued and raised by the Kelly family for three generations. It is free to forage for grubs, berries and nettles, and is hand-plucked, with a longer hang time, to develop flavor and increase meat tenderness.
The Not-So-Fine Print: All turkeys are fresh (never frozen), uncooked and unbrined. Turkeys must be picked up at a Fleishers butcher shop between Mon, Nov 25 and Wed, Nov 27. (We are unable to offer delivery for Thanksgiving orders, but this means we can confirm your order is perfect before you leave the shop!) Orders for whole turkeys require a $60 non-refundable deposit per bird; the remaining balance will be paid when you pick up.

Traditionally, it's a deboned poultry thigh or whole bird that is stuffed with sausage or other ingredients, and tied to hold its shape. Chicken ballotine has been featured on many fine dining menus, and with a little skill and patience, you too will be able to make this magnificent centerpiece. After this class, you'll even take home your handiwork for a stellar home-cooked meal.
