GOFM Recipe of the Week
Picadillo with Cauliflower Rice
Did you know that we offer a variety of Cooking Classes through the year? It's a great way to meet new people, have fun, and learn how to make new dishes from start to finish -- like this one! Enhance the dish by using local beef from Spring Hill Farms or Law Ranch this Sunday.
- 2 Tablespoons olive oil
- 1 medium onion
- 4 garlic cloves, minced
- Pinch red pepper flakes
- 1 ½ pounds ground beef
- 1 ¾ teaspoons salt
- Freshly ground black pepper
- (see full list of ingredients here)
- In a large, heavy saucepan over medium heat, heat the olive oil. Add the onion and cook until tender and translucent, about 5 minutes. Add garlic and red pepper flakes and cook another minute.
- Add ground beef, salt and pepper, and saute, breaking up the meat with a spatula. Cook until the liquid has evaporated and the meat sizzles. Add spices and bay leaves and saute for 30 seconds.
- Add tomatoes and their juices, sweet potato, wine and vinegar. Bring to a boil, lower the heat to a simmer, cover and cook for 15 minutes.
- Uncover pan and add the raisins and olives. Allow to cook for another 10 minutes. Garnish with cilantro, if using. Serve over calui-rice.
