Pasture Raised Lamb

Remember to we have many cuts of our pasture raised lamb in stock grown here in Montgomery County!  You will find ground, lamb patties, ribs, rack chops, loin chops, stew/kabob meat, boneless loin roasts, boneless leg of lamb and shanks. It is not easy to find locally grown lamb in grocery stores but we have it at Four Seasons!

Grass Fed Beef Chuck Roasts

Lamb Bone Broth

Bone Broth is really delicious and warms your soul on a cold winter day!  We have bones available in small or large bags.  Try out the recipe I've included for some delicious soup stock or just savor it by the cup!  

6-8# lamb bones
1 can tomato paste, any leftover add to broth
1 quart of whole tomatoes
3 T olive oil
1 onion, roughly chopped 1inch pieces
1 cup carrots, 1inch pieces
1 cup celery, rough chop, use flowery ends
1 apple, wedges cut in half (optional)
1 Tbsp fresh rosemary or dried
1 heaping Tbsp turmeric
1 tsp fresh or dried thyme
5 garlic cloves, smashed & roughly chopped
1 tsp salt
½ tsp pepper
 
Lay bones out on a cookie sheet, use parchment if you have it. Using a brush, paint bones with tomato paste and roast in oven at 300 degrees for 2 hours.
When bones are done roasting, take a large stock pot (I use a 16 qt) and sauté the onion, carrots, celery, apple & garlic for about 2 minutes.  Add herbs & seasoning and sauté another 3 minutes. Add quart of whole tomatoes, remaining tomato paste and transfer just bones, no liquid to stockpot.  Fill pot with water to cover the bones.   I fill mine about three-quarters full.  Heat to boiling then lower temp to simmer.  Stir occasionally. Simmer on low for 2 to 3 hours. Remember to taste and add another tsp of salt if needed. I did. Pull out bones with a pair of tongs and discard. Do not give to dogs. Using a colander separate the veggies from the broth. Cool broth in fridge or outside so you can pull that top layer of fat off. Heat up a cup to taste. The remaining veggies can be composted. If you choose, you can pick off little bits of meat from bones to use for your soup. Add new veggies to make a soup and additional meat or savor cups of homemade bone broth.  *Recipe created by Wendy Feller of Silver Valley Farm
