It's time for us to come clean: we think you should try an unfrenched rib roast or rack of lamb.
To "french" is a culinary technique, where the meat at the end of a rib or chop is removed to expose the bone. Decades ago, it was trendy to then cover the exposed bone with frilled paper. Today, frenching is still done for aesthetic purposes, and is the default presentation for crown and rib roasts. From our perspective, while frenched roasts do look lovely, we also think unfrenched roasts are gorgeous and you'll get more meat. Frenched bones may be "cleaner" to pick up, but you're losing the joy of eating the crispy, meaty nubs at the end. An unfrenched roast also aligns with our whole animal philosophy, wherein we strive to use every part of the animal to its full potential.
So this holiday season, we're suggesting that you request your rib roast unfrenched. We promise that your in-laws will be just as impressed with the presentation and flavor of your roast, and you'll help fight food waste to boot.
While we're at it, we're also strongly pro skin-on pork roasts. Scored and roasted to a crisp, the skin will keep your roast juicy and elevate it to the next level. This also helps ensure that every part of the animal is used. If you're interested, just include "skin-on" in your holiday order notes.

The Not-So-Fine Print: Holiday orders must be picked up at a Fleishers butcher shop between Mon, Dec 16 and Tue, Dec 24. We are closed Christmas Day and 12/26. After Christmas, we will open for New Year's Eve orders. We are unable to offer delivery for holiday orders, but this means we can confirm your order is perfect before you leave the shop! Holiday orders require a $40 non-refundable deposit per order; the remaining balance will be paid when you pick up.
