Updates from the Farm
The sheep have been spending this early winter in a pasture near the house and sheltered by the woods, and will be there for another week or so, when they'll return the barnyard. We are feeding them round bales and watering them from the old spring box (though, when there is fresh snow, they actually prefer to "drink" that!). The additional organic matter from the hay remnants and the sheep manure is particularly valuable for the depleted soils of this field.

A Tale of Two Barns

Two of the most visible projects over the past months have been the continued demolition and removal of the old barn (two 30-yard dumpsters full) and new siding and finish work on the new barn (thanks to Colin and crew). We are pleased to have been able to incorporate recycled boards from the old silo as the floor of the hayloft and donated boards milled from the backyard of neighbors. (We are grateful to Celina & Erik!) Next step: doors and windows.
Critter Corner
The sharp-eyed among you may have noticed a new pond that the beavers built this summer, just above the pond by the house. It's big enough that we'll have an additional skating pond! To supplement their food supply, they have ambitiously been working on these yellow birches at the edge of the sugarbush.

A delicious way to enjoy Merguez sausage: sliders! Thanks to Laura Lea Berry for the idea and the photo.

Another recommended recipe is this one for lamb shank stew with root vegetables from Simply Recipes--perfect for a cold winter night. Thanks for Kate Rader for that suggestion.

Sale: Rib Racks and Loin Roasts

We have a number of small-ish rib racks and loin roasts that we'd love to move from our freezer onto your plate. These are on sale for $13/lb between now and the end of December (regularly $16/lb). We have a good supply of most other cuts as well, including roasts for your holiday serving needs!

Note that we will be taking animals in for processing next week. If you are interested in a whole or half lamb, we offer bulk discounts. Contact us for details.
