HGC’s January Learning Session: Sam Thayer presents Backyard Edibles

Hudson Grocery Co-op will host an evening presentation by Samuel Thayer, an award-winning author, a native Wisconsinite and all-around naturalist.  Please join us for this free HGC Learning Session: Sam Thayer presents Backyard Edibles on Tuesday, January 7 at 6 p.m. at the Hudson Area Public Library, 700 1st Street, Hudson.
 
Through a lifelong fascination with foraging, Thayer has become an expert at identifying and collecting wild food, leading foraging classes for more than 20 years and authoring three books on the subject, including his recent book Incredible Wild Edibles: 36 Plants That Can Change Your Life.

2020 HGC Market Days

This year Hudson Grocery Cooperative is expanding to host four Market Days in 2020, the fourth Saturday of every month January through April (Jan. 25, Feb. 22, March 28 & April 25). The Markets are set for 10 a.m. to 2 p.m. at the Hudson Middle School at 1300 Carmichael Road, Hudson WI. Please Note: Due to availability, the February market will be at EP Rock School, 340 13th Street S, Hudson. The markets are free to attend and open to the public!
 
We are currently seeking vendors for the Markets. If you are a local producer and would like to be a vendor at one or all of the market days, please reserve your booth space now.
 
Priority will be given to vendors with natural, organic or hand-crafted items. If space is available, booths may be issued to vendors with handmade crafts. Booths are available at a cost of $15 for a booth at one market and $10 for each additional market. Booth sizes are 6’ deep by 10’ wide, with chairs available. Vendors provide their own tables. In addition to the vendors, the markets will include demonstrations, door prizes, and a kid’s activity booth.

Lana & Roy Sjoberg
Owners #200

Meet Roy and Lana Sjoberg. They moved to Hudson in 1988, 08-08-88 to be exact. Here, they raised two sons, Christopher and David, and hosted six Rotary exchange students from around the world.
 
Roy is an attorney in Woodbury. He is active in Hudson Daybreak Rotary and a St. Croix County Supervisor. He enjoys singing and loves to travel the world.
 
Lana, also known as the Hat Lady, is an artist most notable for her hats, which are often seen around town and especially at the Hudson Hot Air Affair. She is on the Visual Arts Council at The Phipps Center for the Arts, and loves teaching children, as shown by her involvement with Jr. Achievement and Summer Art Camp. Lana also loves traveling the world.
 
Roy and Lana belong to Sweet Top Farm CSA, a Christmas gift from their sons, and have joined the co-op in Hudson to have another option for good quality, organically grown, healthy food; and to be part of a like-minded community that values good food. 
 
Lana remembers, “As a child, my sister and I shared a bedroom in the upstairs, attic-shaped room. My mom would put the Christmas cookies in the actual attic near our room because it was cool and kept the Christmas cookies fresh. At night, when my sister and I were certain my mom had gone into the basement to sew or iron, the two of us would sneak into the attic and eat some of the cookies. If there was a row of bars in a pan, we’d take the whole row, so mom wouldn’t be able to tell if some had been eaten. This was the kind of food I loved as a child, homemade Christmas butter cookies and three-layer bars with coconut. I’m not sure my mom ever knew about her naughty little girls, but I’m certain Santa’s elves did!”

Dan & Kris Tjornehoj

Meet Dan and Kris Tjornehoj who have been owners since 2015. Dan is an attorney from Eagle Grove, Iowa. He was long a leader on the Hudson School Board. Kris is a music professor at UWRF. She is from New Richmond and was the band director there during a time when they won numerous awards and gave international performances.

Kris said, “We love the idea of a grocery coop as we are committed to community, health, supporting local farmers/gardeners/merchants and building another alternative for daily shopping to support the economy of Hudson.”

Her most recent favorite food memory is Kale soup at Tillies Farmhouse in St. Paul, MN. Healthy and “oh so tasty.”

HGC Annual Meeting & Board Summary

Despite the small turn out for the HGC Annual Meeting, with 24 owners attending, the board had a great discussion with the owners who were able to attend. The owners provided helpful feedback, and many of the owners stepped up to provide much needed help on marketing and the owner/volunteer committees.

Due to the lack of a quorum at the annual meeting, Board candidates Tom Robinson and Tracy Yndestad were appointed to one-year terms on the HGC Board, and we look forward to seeing how their experience, fantastic energy, and innovative ideas help grow the co-op. Board members Tim Hall and Pam Brokaw were appointed to a second one-year term.
 
At the December board meeting, new officers were elected with Melanie Herbeg serving as president, Tracy Yndestad as vice president, Jacki Bradham as secretary and Sarah Atkins as treasurer.

Breakfast Quesadillas

Recipe from: Co+op, stronger together
 
Total Time: 20 minutes.
Servings: 4

These savory, satisfying, scrambled egg quesadillas will keep you energized all morning long.

Ingredients:
6 large eggs, lightly beaten
1/2 teaspoon salt
1/2 teaspoon pepper
Olive oil for the pan
1 cup shredded pepper jack cheese
4 8-inch whole wheat tortillas
1 cup arugula or spinach, chopped
1 medium avocado, cubed
Salsa

Preparation:
Heat oven to 200°F, if you need to keep the quesadillas warm until you serve them. Whisk the eggs in a medium bowl with salt and pepper, and set aside. Place a medium cast iron or nonstick pan over medium heat and oil or spray lightly with olive oil. Pour the eggs into the pan and cook, stirring occasionally, until they are softly scrambled and still moist. Transfer to a medium bowl and stir in the pepper jack cheese. Divide the egg mixture into four portions.

Place a large skillet over medium-high heat for a few seconds. Carefully place a tortilla in the pan, then spoon one portion of the eggs onto half of the tortilla; sprinkle with a quarter of the arugula or spinach and a quarter of the avocado. Fold the tortilla over to cover the filling, place another tortilla on the empty side of the pan, and assemble the second quesadilla in the same way. Press lightly to seal the ingredients inside the tortillas. Using a spatula, turn the first quesadilla after about 2 minutes, being careful not to spill the filling. The tortilla should be browned and crisp. Repeat with the remaining tortillas and filling. Turn the heat down to medium if the tortillas are browning too quickly. Transfer the finished quesadillas to plates, cut each quesadilla in three wedges and serve with salsa.

Serving Suggestion: Serve with a bowl of cut fresh fruit to add a sweet touch that balances the savory, spicy flavors of the quesadilla.

Nutritional Information: 460 calories, 25 g. fat, 340 mg. cholesterol, 1000 mg. sodium, 34 g. carbohydrate, 6 g. fiber, 25 g. protein.

How about making specialty diets or recipes? If so, we need you!  Please consider helping with a learning session. A few hours of your time can go a long way towards helping the Co-op.

If you’re too shy to lead a class, don’t worry! There are a lot of behind-the-scene opportunities waiting for owners, too. Data entry, article writing, helping set up at events are just a few of the ways owners can contribute.
