What's SOUPer This Season 🍵

Here at Cully and Sully we love to celebrate the change of years by eating through the seasons.

This month we are loving all of those deliciously warming root-y vegetables. We have beaten the January blues by feasting on a comforting baked White Winter Vegetable risotto. Simply prepare it, pop it in the oven, head out for a walk and it will be ready to tuck in to on your return.

Check out the delicious recipes and serving suggestions below. We are also giving away 2 Fitbits this month to two lucky subscribers to help you along on that January health kick ;)

Ingredients:

25g butter
1 Tbsp extra virgin olive oil
1 large clove or garlic crushed
1 medium onion diced coarsely
1 large stick of celery (50g approximately) sliced.
75g white of leek sliced
A good pinch of salt and twist of pepper
200g arborio rice
75ml white wine

1/8 of a whole celeriac (200g approximately) peeled and chopped into big chunks 1.5cm approximately
1/2 of a large parsnip (200g approximately) peeled and chopped into big wedges 1.5cm approximately
150g cauliflower florets
A sprig of each thyme and rosemary
750ml of light veg stock

Look who's back!! We know a lot of you will be delighted to hear of the return of our special guest White Winter Vegetable soup. Check out this delicious serving suggestion:

Garnish with toasted hazelnuts. Simply pop whole nuts into a 200 degree C oven for about ten minutes or just until the skins loosen. Rub off the skins in a tea towel. Chop up coarsely and sprinkle over the soup.
