Hints of Spring

New lambs, first drips from the maple taps, lengthening days, and melting snow starting to flood the barn. Never mind that snow is in the forecast--surely spring is not far off?

While it has been a relatively mild winter, there has been enough snow for us to get a few skis in. We're working with East Montpelier Trails to create a permanent public trail that will help connect two segments of the current trail network.
Maybe it's overly optimistic, but Sunday was so warm and sunny that I couldn't help myself--even if it is a week before Town Meeting Day! Only a handful of test taps for now; eventually we'll put in 30-40 total.

Recipes: A Great Time of Year for Stews


I am fond of this recipe for Ethiopian Spiced Lamb Stew (from Food & Wine), recommended by friends David & Tanya years ago. It is deliciously spicy, though the heat can be moderated by using less berbere spice mix. (The above photo shows a different lamb stew, thanks to Daniel.)

Somewhat relatedly, here is an interesting story from NPR about the apparent comeback of mutton. Mutton is not only delicious, typically with a more complex flavor than young lamb, but it also makes producing sheep meat more economically sustainable for farmers. (If there were enough demand, we could have mutton available.)
