On February 12, 2020, the Department held its annual Battle of the Food Scientists which was live-streamed on Facebook. Seven teams competed over two rounds. The first was dedicated to making peanut butter, the goal was to make a peanut butter product that met the USDA’s Standard of Identity while also cleaning the workspace to pass an allergen test. The second round was a test of ingenuity, teams had to incorporate coffee (in liquid or ground form) into their dishes. The final winner was Team #6 which consisted of Cyril Ayuk, Emerson David Nolasco, and Alisha Kar

Congratulations to Drs. Bob Hutkins and Randy Wehling who both received a Certificate of Recognition for Contribution to Students at the 2019-2020 Parent's Recognition Awards. Beginning in December, the UNL Parents Association solicited parents of university students to consult with their student(s), and to nominate a faculty or staff member who "has made a significant contribution to their lives while at the University". The reception will be held March 6, 2020, in the Willa Cather Dining Complex. This is Dr. Hutkins' 3rd year nominated and Dr. Wehling's 7th year.
Keeping your office environment safe

Fire safety.  Routine inspections around the office can help reduce the likelihood of fire.
  • Maintain cords in good repair.  Damaged and ungrounded power cords pose a serious fire hazard.  Remove any from service with frayed cords/exposed wires.  Make sure cords are not overloading circuits.  Do not use extension cords as permanent wiring.
  • Do not use space heaters.
  • Never block fire sprinkler heads.  Never place anything higher than 18 inches below sprinkler heads to allow full range of coverage.
  • Do not block escape routes or prop open fire doors.  Never store items in an emergency exit route.
  • Do not use “power strips” to energize high amperage devices (e.g., refrigerators, coffee pots, microwaves, etc.).
  • Avoid excessive accumulation of ordinary combustibles (e.g., paper, cardboard, etc.).

Lab Animal Care Assistant 

Gnotobiotic Mouse Facility

University of Nebraska-Lincoln, Lincoln, NE

Working with mice in sterile environments; preparing the food, water, and bedding for the mice and maintaining the sterile conditions of the isolators using aseptic techniques. Performing periodic microbiological quality-control checks and assisting lab personnel with various mouse-related tasks. The position is for Fall 2017 and possibly longer. Find more details here.

Student Research Project

Bioprocessing Laboratory Specialist
University of Illinois

Supervise and perform the day-to-day research, operations, and safety oversight of the IBRL-PPP and
laboratory. Schedule and prepare for research trials by students, faculty, and outside researchers. Serve as primary research specialist for operating and maintaining extrusion research equipment in facility.
Ensure equipment is available and ready for use. Provide expertise to faculty, students, and outside users performing research to ensure safe and successful use of facility equipment, including coordinating without outside contractors as necessary.
