Let's celery-brate spring!

In this issue

[Keep reading to learn how we chose the title for this month's issue!]

Happy early spring!

Women's History Month

March is National Women's History Month, which pays homage to the vital role of women in American history. Originally celebrated in 1981 as "Women's History Week," Congress officially declared March as Women's History Month in perpetuity in 1987 after years of national lobbying efforts. This month, we also observe International Women's Day (March 8th), a global celebration of the economic, political, and social achievements of women. As you celebrate this March, pay particular attention to stories of queer and trans women, gender non-conforming folx, and women of color.

Veg out for National Celery Month!

Did you know that March is National Celery Month? Yep, it's a thing! And we've included a few recipe ideas in this issue in order to celery-brate!

  • A somewhat fancier twist on classic "ants on a log," try celery, date, and almond butter toast. This sweet and savory recipe calls for almond butter on toasted bread, that is then topped with shaved celery, dates, a little sea salt, and a drizzle of olive oil.
  • Make a mirepoix! Mirepoix, a staple of French cuisine, is a mix of carrots, onions, and celery sautéed slowly in butter or oil that provides the base for an array of savory dishes.
  • When discussing celery, we usually talk stalk. But celery leaves, which often get thrown away, are delicious and nutritious too! You can toss them with salad greens and a vinaigrette, throw them in a stir fry, or incorporate them into any number of soups and sauces.
