Harvesting School Garden in San Luis Obispo and Santa Barbara Counties

To fortify nutrition and food security efforts, CalFresh Healthy Living, UC staff in San Luis Obispo and Santa Barbara counties are supporting the maintenance of established and productive school gardens to ensure food does not go to waste. Staff have created videos educating students on what is growing in their school garden and other videos showing home gardeners how to start seeds and harvest food safely. Crops of lettuce and carrots have been harvested from three school gardens. This food has been delivered to school food service for use in school meals, distributed to families or donated to a local food pantry.

The Flipped Classroom Model in Central Sierra Schools

The CalFresh Healthy Living, UC (CFHL, UC) program partners with schools and teachers to deliver research-based nutrition education at low-income schools in 32 counties of California. With the closure of the state’s schools for an indefinite time due to the COVID-19 crisis, CFHL, UC staff have been tasked with finding ways to continue educating their communities. In the Central Sierra, the CFHL, UC program serves 30 schools in the counties of El Dorado, Amador, Calaveras and Tuolumne. In order to continue educating the community CFHL, UC is piloting an adaptation of the Serving Up My Plate curriculum for online learning using a virtual flipped classroom format for 1st through 6th grade, which combines a pre-recorded video, hands-on homework assignments, and a live video call for each lesson. This is a new approach for the CFHL, UC program in California, and once piloted and finalized will possibly create new opportunities to offer quality nutrition education virtually. Read more.

Five Star Chefs in The Making!

In the rural Tulare County community of Farmersville, CA. approximately 93% of Farmersville School District students receive free and reduced meals. In Freedom Elementary School, cooking literacy and nutrition education were identified as areas that required concerted attention. This was revealed through qualitative comments from students during a recent plate waste study conducted by the Food Service Director and CalFresh Healthy Living, UCCE Tulare County Supervisor.
Armed with this information, CalFresh Healthy Living, University of California (CFHL, UC) Tulare County joined forces with UCCE 4-H, Freedom Elementary School, and California Teaching Fellows Foundation (CTFF) After School program to implement a hands-on 4-H Cooking Academy targeting 4th-6th graders. Growing Skills for a Successful School Garden

Seventy percent of rural Orland, California students are eligible to receive free or reduced-price school meals. The need to address access to healthy nutrition led teachers and staff at Mill Street Elementary to team up with CalFresh Healthy Living, UC (CFHL, UC) and build a school garden in the spring of 2019.
Mill Street is a K-2 Spanish and English language immersion school with an enrollment of 500 students. Orland, in the rural Sierra Nevada Mountains of Glenn County, is approximately 20 miles west of Chico. While CalFresh Healthy Living, UC provides all the teachers at Mill Street with evidence-based nutrition and physical activity curricula on a monthly basis, teachers voiced a desire to have an experiential learning component and requested garden development.
Once the Mill Street garden was established, CalFresh Healthy Living, UC and the UC Master Gardeners (UCMG) worked together to develop the Garden Extender Program. Ten teachers were offered instruction on the use of the Teams with Intergenerational Support (TWIGS) garden lessons with their students and monthly toolkits were distributed which include all of the supplies needed to teach each lesson. This program was developed to empower teachers to take the role of garden instructor while utilizing the garden resources that CFHL, UC and UCMG have to offer. Read more.
