LIGHT WINES FOR DARK TIMES
Solidarity with all our local customers right now, these latest times have been very tough, we're appreciative to be busy but definitely feel deflated and spent. Thank you all so much for your support and we're very happy to be providing a much needed (and well deserved) comfort in these times. We have to ask everyone to please do their best to follow the guidelines and think about the greater good, we'll be doing our best to keep the wines interesting and rapidly updated with new packs, bottles and producers. Read on for this week's gear...
DIVINE (MINIMAL) INTERVENTION

Just your average winery of 80 Cistercian nuns making natural wines under the tutelage of Giampiero Bea. That said, these nuns have really made a name for themselves and their deliciousness makes them stand out from the crowded market of monastic natural wines. We've been drinking these wines for a few years and are always amazed at the purity, the simplicity and the digestibility. They're practically good for you. Very rustic, simple winemaking but with a... well, monastic patience and attention to detail. Real wines like the locals would have been drinking hundreds of years ago. There's the 'Ruscum', a savoury and dry orange wine of Trebbiano, Malvasia and Verdicchio - the same blend as the delicate, floral white 'Coenobium'. The 'Benedic' is a lovely light red in the vein of a jura Poulsard but with the earthiness that comes from Sangiovese and the soft, cherry fruit of the Ciliegiolo variety.

1100 YEARS OF ORGANIC FARMING AT PACINA

Pacina is a legendary estate in the hills outside Siena, Tuscany. Part of the Chianti zone, and originally established in the 10th century (!) Pacina is a mixed farm growing grapes, olives, cereals, legumes and fruit and veg. The same family has cultivated this land for 5 generations with a sensitivity to nature and gentle organic farming. Their wines are a mainstay of the European natural wine scene and in a sense they were doing it before anyone knew what it was. Tuscan to the core, these wines are brimming with energy and charisma. La Cerretina is Pacina's only 'white', and it's a deep orange, savoury, nutty and herbal. The Rosato is a fan favourite that has been missing for a few years, 100% Sangiovese, ripe and delicious. The Canaiolo is another rare single-variety bottling of the grape that usually plays second fiddle to Sangiovese in Chianti blends but here sings with cherries and spice a vibrant medium-bodied red. 
PINT OF THE BLACK STUFF THANKS

We're thigh deep in the stout season right now, and if you're not a believer then it means you just haven't had the right stout yet. The right stout will satisfy you like nobody's business, warming and refreshing at once, maybe with a little coffee kick, thick and creamy, yes please. Edge brewing like to go the the nth degree with these things and they're not going to just make a shitty thin stout like most Australian non-believers. We have on the site both the Espresso Nitro Wattleseed, with roasted wattleseed providing a remarkable coffee impersonation and the Black Box Nitro Dessert stout, made for Ides restaurant with pear, toasted hazelnut and black truffle! The Nitro (nitrogenated not carbonated) is key for that creaminess you'll find in your old mate Guinness™. Not your average beers as usual, give them a whirl while you've got the time on your hands!
