Swiss Chard

Swiss Chard is this week’s Fresh Pick of the Week from the valley’s three Certified Farmers’ MarketsSwiss Chard is one of the most versatile, yet overlooked of the many varieties of edible greens available today. Fresh young Swiss Chard is a great addition to salads, and mature chard (leaves and stems) can be cooked, stir-fried or sautéed. 

Although slightly bitter when eaten in salads, Swiss Chard’s bitterness fades with cooking, leaving a delicious somewhat sweet flavor that is akin to beet greens (to which Chard is related), and more delicate than cooked spinach (another Chard relative). Swiss Chard leaves and stems are also great additions to soups or stews. All varieties (green, rainbow, red, and golden) of Swiss Chard are currently available at all three locations of the Certified Farmers Market.

Did you know: If vegetables were graded, based on the amounts of vitamins, nutrients and other healthful benefits, would top the list, particularly when it comes to the prevention of digestive tract cancers and colon cancer.
