Welcome to the brand new look for our Newsletter. My name is Ashley and I'm the new editor. Produce Highlights

Eat your veggies! Here's a highlight on one of our fresh, in-stock vegetables at the Co-op: COLLARDS.

What Are Collards?  They are a member of the cruciferous family. They have large, smooth leaves that are dark green to bluish green in colour. The leaves are quite stiff and have a long stalk.

Why Should We Eat Them?  According to Dr. Michael Gregger, â€ścruciferous vegetables do wonders for your health, from fighting cancer and boosting your defences against pollutants and pathogens to protecting your brain, vision and more.” Elson M. Haas, MD states in 'Staying Healthy with Nutrition': â€śCollard greens in particular are rich in Vitamin A, with some protein, good fibre content, vitamin C and a good source of the minerals calcium, potassium, iron and zinc”.

What Do You Do with Collards?  Steaming them quickly like spinach will keep the most nutrients. As well, shred them and add them to soups, scrambled eggs or tofu, fried rice or tomato sauces, add torn up pieces to your smoothies, juice them whole, or get adventurous and use them whole as a wrap with your favourite fillings.
