Evenings are getting lighter, hedgerow daffodils are in full bloom and a host of delicious, seasonal produce is coming into the shop. Hip, hip hooray for bright spring days with Easter just around the corner!

Have a butcher's

We're raising a glass this week to all the brilliant butchers flying the flag for responsibly farmed, high-welfare meat as we celebrate National Butchers' Week.
What's on our butcher's counter varies with the season, but we've always got delicious cuts of our Dexter beef, reared for us by Rob and Alison Kirk in Moreton-in-Marsh, and Highland beef, produced by fifth generation farmer and champion pie-maker Annie Perkins in Bidford-on-Avon.
Chicken and game is supplied by Adlington Ltd, our fabulous turkey farmers up in Warwickshire.
Lamb comes from the wonderful Nolan Brook - more from them later in the newsletter - and free-range pork from the Dorn Farm, also in Moreton. Again, more on their award-winning Glamrock business later.
Our butcher, Ben, makes his own sausages on-site using free-range cuts with a secret blend of herbs and spices and no artificial additives or preservatives, with no rusk in sight.
Our spring selection includes pork and leek; curried lamb and black pudding sausages - the perfect breakfast fodder - and more varieties are added each week.
As spring turns into summer, we'll be preparing lots of brilliant barbecue cuts, from kebabs to burgers and marinated spatchcock chicken to koftas.

It's a sign!

Fresh fish and shellfish is one of life's great joys - and when you live this far from the sea, it's not an easy catch. Fortunately, thanks to our friends at New Wave Seafood, we have the best of British, seasonal fish and shellfish delivered four days a week, straight from the day boats.
That means it can be on your plate less than 24 hours after it was landed. Pop in to see what's good today, or order something special for collection. Halibut, cod and mussels are all at their peak now.

Chop, chop

Adam Henson filmed them for BBC Countryfile and they've won a host of awards - and now this delicious Glamrock pork is on our butcher's counter. Produced by Sarah and Simon Righton of Dorn Farm in Moreton-in-Marsh, five miles from the shop, this is fully-traceable free-range pork at its very best.

Lovely lamb

Nolan Brook is one of our hero producers and there's no better time than now to try this delicious, homegrown Cotswold lamb.
Farmed up in Mickleton by Sam Walby and Hayley Deaville, just a few miles from the shop, Nolan Brook's lambs are reared on rich grassland using traditional practices.
From succulent chops to shoulders and legs big enough to feed the family, Butcher Ben will advise you on the perfect cut.
Or why not call him beforehand, and he'll prepare it for you? Here's one he made earlier...a deboned, rolled shoulder stuffed with apricots and fresh mint.

In season now

You know better days on the way when the first fronds of forced rhubarb arrive in the shop. Along with purple sprouting, celeriac, cauliflower and leeks, there's a host of seasonal fruit and veg

on our shelves, waiting to give you that five-a-day boost.
Try mashing cooked cubes of celeriac with your usual potatoes for a deliciously nutty mash. It's excellent with butcher Ben's sausages or your weekend roast.

Sunday opening

Hip, hip hooray! We're back open on Sundays so you can now get your Fillet & Bone fix seven days a week.
