After putting in all the time, toil and effort to get a wine soundly into bottle, I generally put the wine out of mind for a month or two when I catch up on other endeavors. I just stick it away in the cellar and let it sit. One of my favorite parts of the winemaking process is the anticipation that builds when there is finally time to grab a bottle (chilled, in the case of Riesling) and pop the cork to see what I've got. That's what's going on tonight at Waxwing as we'll be tasting the 2018 Tondré Grapefield Riesling for the first time in bottle.

2018 was the first vintage pressing the Riesling in the new basket press. With the new pressing regime the juice spent more time on the skins than in past vintages and the result is a wine with a tad more weight while still retaining the interplay of acid and sugar and the wonderful zingy, fresh finish.
Club shipping to out of town members will start the second week of April as will local deliveries. If you can't wait, stop by tonight to try the Riesling and the spring Club Waxwing selections.
