Tamarind paste is typically used in Asian (classic Pad Thai for instance), Caribbean and Middle Eastern cuisine. Tamarind are quite sour, with a slight citrusy taste, followed by hints of smoke and caramel. Interesting side note: Tamarind is a key ingredient in Worcestershire sauce!
