Easter dinner is always a welcome time in our home. 

It’s the first time our whole family gets together since Christmas.   Temperatures are warmer and spring is in the air.  Usually, we end up grilling a turkey or other meat to serve along with our traditional ham.  I wanted to share some of my time-honored recipes that I have ‘borrowed’ from other chefs and cooks that I admire so much. 

On the few occasions I have veered away from our traditional dishes, I have lived to regret it.  Our family counts on having all of these favorites and I usually pretty much stick to them each year.  Of course, there is usually some type of salad along with cut up veggies for snacking, as well as chips and salsa and my daughter-in-law’s delicious queso.  We always end up with too much food but that’s part of the fun as we divide up and disperse for taking home. 
These are my ‘go to’ rolls for every family occasion such as Easter, Thanksgiving, etc.  It’s such a timesaver when you have so many other dishes to prepare and I think they are almost as good as homemade!

This ham is a knock-out!  The method used to prepare it turns out a succulent, delicious ham and the glaze adds just a hint of spice, almost undetectable.  Rich, savory and delicious!  The cooking method allows you to do the first part of cooking on Saturday, and finish on Easter Sunday if you wish.  And it’s a lot easier on the pocketbook than the more costly ‘honey’ type hams.

I love Ina Garten’s spin on this fabulous carrot cake.  The candied ginger adds elegance to the cake that elevates it to the next level!

In the sake of time, which I am short on myself this week between work and Easter preparations, I wanted to share this southern green bean recipe.  It’s almost identical to the way I do our family fave green beans.  The only difference in mine is I leave everything in the pot rather than remove certain elements and add them at the end.  I also use Fiesta brand Chicken Rub as my seasoning along with garlic powder and plenty of good fresh ground pepper and Redmond’s Kosher Sea Salt.  DELICIOUS!!
