Hello Hudson Farmers' Market Friends!

Hudson Market Haul

This is the official start of our weekly feature: Hudson Market Haul! HMH is meant to encourage you to bring your reusable bags and baskets when shopping at the market. The intention is that by seeing and sharing what other customers are buying you will be influenced to participate in our new effort toward sustainability! So, from last Saturday, we have a picture-perfect shot of Mairead’s woven basket, filled with carrots from Blue Star Farm, spinach from Sparrowbush Farm, goat cheese from Ardith Mae, asparagus from Samascott’s Orchard, and a gluten free and vegan peanut butter brownie from Happy Belly

Weekly Recipe: Grilled Pork Chop + Sweet & Tart Cucumbers

2 pork chops

1 jar of sweet garlic preserve

garlic powder and sea salt, big sprinkle on both sides

2 cucumbers, peeled and thinly sliced

3 cloves garlic, minced

1 inch nub of ginger, minced

1/2 red onion, julienned

1/3 cup apple cider vinegar

2 tablespoons water

3 tablespoons cane sugar

coriander, black pepper, and sea salt to taste

fresh herbs like basil, cilantro, parsley, green onion, etc to finish

Process

Add garlic and sea salt to pork chop/ grill to the temperature you prefer/ after it’s done and before serving, liberally add sweet garlic preserves to the top.

Add together all ingredients of cucumber salad in a bowl/ adjust liquids and sugar to your preference/ let marinate at room temperature while grilling.

How to Eat

Take some of the marinating liquid from the cucumbers, a little olive oil, and some sea salt to coat your favorite greens— spinach, kale, chard, lettuce will do! A side of pickles from Spacey Tracy’s or ferments from Hawthorne Valley will balance out the richness! We also threw on some beet micros and grilled ramps and lemon for an extra pop!

You can find pork chops and cucumbers at Martin Farms— other cuts of meat that would work well can be found at The Farm at Miller’s Crossing, Raven and Boar, Hawthorne Valley Farm, Northern Star Farm, and Pura Vida. You can find sweet garlic preserves at Atina Foods. Garlic, greens, onion, and herbs can be found at a variety of our vendors including Red Oak Farm, Scarecrow Farm, Blue Star Farm, Sparrowbush, Miller’s Crossing, and Martin Farms.

Market News

To brighten your weekly table, Marilyn at Cedar Flower Farms will have hybrid lilies, poppies, French tulips, and hellebores. The poppy and French tulip crops are just starting to come in, so expect tons over the next few weeks. The hellebores sold out quickly last week so grab ‘em first thing!

Bonhomie Farm is one of our new vendors this year. They grow a variety of micro greens (so the plant just BEFORE the true leaves begin to emerge!) that are absolutely delicious and quite beautiful: arugula, peas, beets, radish, sunflowers, and a spicy mix that has a wasabi mustard with a seriously intense kick! Woooo!

If you’ve been over to Sparrowbush’s tent you have probably seen their seeded rye— it’s a complete standout. They source butternut and pumpkin seed from NYS vendors and they add to it, sesame, flax, sunflower, whole cooked rye and oat berries. The loaves are dense, hardy, and rustic with a flavor that is perfectly sour and balanced.

OM Champagne Tea and Wild Roots Farm will be our Guest Vendors this week! OM Champagne Tea is a cultured tea— heartier and fuller bodied than kombucha— made in small batches with ingredients like ginger, turmeric, chaga, mango, red shiso, grapefruit, and matcha. Wild Roots Farm is known for their gorgeously healing goat milk soaps. The bars are complex, colorful, and completely fascinating— Mary uses ingredients like clove, clay, star anise, myrrh, charcoal, gold mica, geranium, and ALWAYS milk from her happy herd! 

We’ll have the Kitchen Girls under the Music Tent too! They were a favorite last year and we are so happy to have them playing Appalachian fiddle tunes for us again.

Market is rain or shine. It runs from 9AM to 1PM in the parking lot at the corner of 6th and Columbia. See you Saturday!
