Hello Hudson Farmers' Market Friends!

Hudson Market Haul

This week we are featuring Jenny’s beautiful haul—filled with a collection of colorful ranunculus from Cedar Farm, braising greens from Sparrowbush, carrots from Blue Star, and an unseen loaf of rustic bread from Hawthorne Valley.

AND, on opening day, Brian and Peggy came dressed as “Bad Plastic Bags” and “Good Recyclable Containers”. They certainly looked amazing and we totally appreciate their commitment to supporting sustainability! Our newsletter PSA: remember to bring along your reusable bags each week.

Weekly Recipe: Pan Seared Steak

Taking a page from food writer Diana Henry’s books (which we have been voraciously reading and loving her “lazy” take on cooking), we wanted to give an easy guideline for this week’s recipe. This means you can substitute any cut of meat, greens, and cheese. It’s a simple preparation and doesn’t take too long.

2 steaks

sea salt

butter

olive oil

2 pints of halved shiitakes

1 medium julienned red onion

3 cloves of garlic, minced or grated

1/2 bag of spinach

Process

Heavily salt and sear the steaks in a bunch of butter (or grill!) to your desired temperature/ let sit and then slice/ add mushrooms and olive oil to the searing pan with reserved drippings, sauté until turning golden brown, and then remove from pan/ add red onion and a drizzle of olive oil to the pan and let soften before adding the garlic and spinach/ remove from heat as soon as spinach starts to wilt/ assemble!

How to Eat

Throw steak atop the spinach, add sautéed veg to the top, and garnish with cheese and sauce—we used goat feta and chile de arbol (from Salsita who will be here next week as a guest vendor!). Pair with a simple roasted sweet potato or a heel of bread to soak up the drippings.

You can find the steaks in many cuts and sizes from a number of vendors— The Farm at Miller’s Crossing, Martin’s Farm, and Hawthorne Valley Farm. Shiitakes can be found at Township Valley. Garlic, onions, greens, and sweet potatoes can be found at Blue Star Farm, Red Oak, Scarecrow Farm, Sparrowbush, and a few others already mentioned. Goat feta can be found at Ardith Mae Farmstead. Really delicious breads, perfect for mopping up, can be found at Berkshire Mountain Bakery, Hawthorne Valley, and Sparrowbush.

Market News

Berkshire Mountain Distillery and Township Valley have the perfect “spirits” to enhance your day, night, week, weekend, whatever— we don’t judge! Pair BMD’s Ethereal Garden Gin with fresh cucumbers, basil, lemon, seltzer, and your favorite sweetener for a refreshingly unique drink. The botanicals they use play nicely off the crispness of the cucumbers (we got ‘em!) and intensity of the basil. Alongside their shiitakes and oysters, TV just started bringing a new line of mushroom tinctures and CBD-infused MCT oil. Each tincture is crafted to compliment the health benefits of certain mushrooms— chaga, lion’s mane, reishi, and cordyceps. We grabbed a bottle of CBD oil last week and have been taking it for a stiff back. It works great, has a neutral flavor, and comes in 3 strengths. Ask questions, Mike knows a lot!

David from Churchtown Gardens will have strawberry rhubarb pies— each lovingly handmade with an authentic, flaky, and delicious crust. They are filled above the brim with berries, chopped rhubarb (from his gardens), and lotsa lemon (juice and zest) to highlight the natural tartness of this springtime comfort. The heart cutouts certainly help!

Lynn over at Rock N Raw will have a variety of freshly-made pestos along with aged cheeses from Cooperstown and soft cheeses from Churchtown Diary. All her creations are so delicious, but the standouts last week were the ramp-spinach pesto and the kale-walnut pesto. Both are made with Toma Torino, local greens, olive oil, garlic, lemon, and seasonings— she samples often!

Highland Farm returns this week with their collection of fresh cuts and smoked game meats: venison, elk, buffalo, and wild boar. All the animals are raised locally and free ranging in Germantown— tall fences abound!

Wild Roots Farm and Half Pint Farm will be our Guest Vendors this week! Mary from Wild Roots makes the most magically luxurious goat milk soaps from a variety of unique ingredients. Her booth smells amazing and she loves sharing what she does (definitely ask about the gold mica and star anise one!). Half Pint Farm will be bringing meat (pork chops are delicious!), eggs, and baked goods. Customers have very much missed them!

ProSharp will be sharpening all your cutlery and tools in their mobile van. Look for them at the 6th Street entrance. Bob does a great job! Roger and Lenny will be playing under the Music Tent too! These two are known for their amazing harmonies and straightforward arrangements.

Market is rain or shine. It runs from 9AM to 1PM in the parking lot at the corner of 6th and Columbia. We can’t wait to celebrate another year! See you Saturday!
