Seasonings & Spices
- 1/2 tsp sea salt
- 1/8 tsp minced garlic
- 1/8 tsp cayenne pepper or Crystal Hot Sauce
- 1/8 tsp black pepper
Veggies — 30-70%
- 4 cups niblet corn, sliced CLOSE to cob
- 1 bunch green onions, or sweet onion, chopped
- 1 sweet bell pepper, chopped
- fresh parsley finely chopped, for garnish (optional)
Eggs, Fish, Natural Dairy– less than 5%
- 1 1/2 cups shredded or sliced Mozzarella cheese — protein-rich
- 1/2 cup plain Greek yogurt — protein-rich

Shuck corn and cut corn niblets, close to cob. Add bell peppers, onion, garlic and niblet corn to a roasting dish with water to just cover. Roast in 375 degree oven for about 20 minutes.

Add the black pepper, garlic, sea salt and cayenne pepper sauce. Stir the ingredients into the corn.

Add cheese, place dish back in oven to melt cheese.

Garnish with Greek plain yogurt, freshly chopped parsley and more seasonings if desired.

Ingredients
Veggies — 30-70%
- 1 small sweet onion or green onion, finely chopped
- 1/2 cup chopped fresh spinach
- 1/3 cup chopped fresh tomatoes
- 1/2 cup sweet bell pepper, chopped
Seeds, Nuts or Avocado 10-40%
- Optional topping: Sliced avocado
- 1/4 cup almond milk
Eggs, Fish, Natural Dairy– less than 5%
- 6 eggs
- 1/4 cup plain Greek yogurt, Optional topping
- 1/3 cup sharp cheddar, grated
Condiments — less than 5%
Seasonings & Spices
- 1 teaspoon pepper
- 1/2 teaspoon real salt

Preheat the oven to 350°F. Grease a muffin pan with olive oil.

In a large bowl, whisk together the eggs, milk and a pinch each of salt and pepper.

Stir in the spinach, tomatoes, peppers, cheese and onions.

Divide the mixture evenly between 6 muffin pan cups. Bake for about 20 minutes, or until the muffins are set and firm in the center.

Remove the muffins from the oven and allow them to cool for 5 minutes in the pan, then use a butter knife to loosen the muffins from the cups.
- Serve warm or room temperature (on the go).
- Optional: top with avocado or Greek yogurt

1 Meyer or other lemon, thinly sliced (about 1/8-inch slices)

3 cloves garlic, sliced

2 tablespoons coconut oil

Coarsely ground salt and pepper to taste

Preheat oven to 400ºF.
