Chefs A' Field Good Catch

Airing on PBS beginning in June, Chefs A' Field Good Catch has a mission to encourage American consumers to cook and eat more sustainable American seafood. The television series will follow American chefs as they leave their kitchens to team up with fishers and fish farmers so viewers can learn more about sustainable seafood. In addition, the series highlights why sustainable seafood is good for human health and the planet. After bringing in their seafood haul, the chefs return to the kitchen to cook up dishes. They also use this time to give viewers some helpful tips for cooking and buying seafood.

The first season of the series features:

Recipes from the show will be available for download after episodes air. You can learn more about each episode here — additional episodes are currently in production for season two.

The Chefs A' Field Good Catch series is part of a larger movement to promote awareness of sustainable seafood, tell stories about those in America's fishing and aquaculture industries, generate dialogue about sustainable seafood, and empower American consumers to feel confident in purchasing, cooking, and eating sustainable seafood. If you are interested in getting involved, you can email production@goodcatchfilms.com.

Seafood Spotlight: Skipjack Tuna
Seafood Spotlight: Skipjack Tuna

Skipjack is the species most commonly used in canned tuna. It is mainly sold as “canned light” or “chunk light” tuna, and it is also available fresh and frozen. Skipjack has the most pronounced taste of all of the tropical tunas and when raw, good-quality skipjack meat is deep red. Smaller fish are lighter red. Cooked skipjack becomes light gray. Some canned skipjack maybe be mixed with yellowfin tuna when the species aren't separated at harvest. Some sushi markets prefer skipjack tuna because it’s comparable to yellowfin tuna when fried or grilled.

Key sustainability sourcing notes for skipjack tuna based on landings data from 2016-2017 and based on the most recent Seafood Watch assessments and MSC certifications as of May, 2019:

  • % of landings for skipjack tuna by gear type is ~45% purse seine (FAD), ~30% purse seine (non-FAD), ~15% gillnet/other, and ~10% pole-and-line
