Most tutorials are fully re-done with new materials and better techniques to work with QGIS 3.4 LTR. Here are the new tutorials that you may want to check out.

I also wrote a completely new tutorial for PyQGIS Running Processing Algorithms via Python (QGIS3) that shows you how to write simple python scripts to do custom geoprocessing.
