Ladies and gentlemen, boys and girls, coming up next . . . the one, the onlySUMMER! Well, actually I, for one, could do with a bit more springsince in our neck of the woods, April showers brought more May showersbut weather’s gonna do what weather’s gonna do. This week’s meal plan is created with hopeful thoughts about balmy-yet-mild weather.

we all should make sure to take a moment and recognize the real purpose of the holiday, and think of all of the men and women who put themselves on the line for our country. Thank you.

OK, so last week I gave some main-course ideas, and now I’m going to throw a few side-dish suggestions your way because if you’re like me, your menu might still be evolvingthink about Simple Vegetarian Spring Pasta Salad, Mediterranean Tomato Wheat Berry Salad with Fresh Herbs, Greek Tabbouleh Salad, and Mediterranean Couscous, Swiss Chard, and Peppers.

Also, if you’ve never made your own homemade barbecue sauce, you’ll be overjoyed to find out how delicious and easy it is.
Flavorful seasoned ground chicken is piled with a bit of rice in lettuce cups, and it’s freaking amazing. Serve this with Thai Cucumber Salad.
