If you are a parent, right about now (or a couple of weeks ago, or a couple of weeks from now) your kid may be finishing his or her school year. Which also means that he or she may be in the throes of finals. Which is just a downright painful time for students . . . AND ALSO FOR PARENTS! IT’S A REALLY, REALLY HARD TIME FOR PARENTS.
The kids are working hard and stressed and that’s very hard to see. Or they’re not working hard and not all that stressed . . . and then you just get to be stressed for everyone.
But one way or another, the books will be closed for the summer and we’ll all just take some breaths until we rev up again in the fall. Meanwhile, these are some of the things I have been making and will continue to cook at this time of the year (#saladalert).
This months recipe is the special Tomato, Red Onion, Watercress, Feta, and Olive Salad. I’m picking this based on visual appeal alone, but there's more to it than that. Fifteen minutes gets you to an explosion of summery color and flavor in a bowl.

I have a fondness that borders on obsession for hearts of palm. I ate a jar pretty much every day when I was pregnant with Charlie, and I can eat a whole lot of this salad.
