Blueberry Balsamic Smoothie 🌱

Ingredients

  • 1 ripe fresh or frozen banana (the riper, the sweeter)
  • 1 cup frozen blueberries
  • 1/2 cup Greek or farm-fresh, whole yogurt
  • 1/4 to 1/2 cup almond milk or water
  • 1 Tablespoon almond butter (optional)
  • 1 Tablespoon Saporito Wild Blueberry Balsamic Vinegar
  • 1+ full cup spinach leaves or kale

Directions

Blend first six ingredients well. Add one full cup of kale or spinach leaves and blend again. We sometimes like to add chia, flaxseeds and/or coconut and an optional Tablespoon of almond butter. Mix well.

Super-popular in our home due to the gratifying taste and cool refreshment. Garnish with mint leaves or any fresh herbs you can find. Soooooo good!

Watermelon Salad with Mint

Place watermelon pieces in a large bowl. Drizzle with EVOO and balsamic vinegar and toss. Can add cut cucumbers, chopped red onion or almond slivers for extra crunch. Squeeze lemon over the salad for more flair. Season lightly with sea salt and a few grinds of black pepper. Sprinkle with feta and fresh-picked mint leaves.

Refrigerate or serve immediately. Perfectly refreshing and tasty!
