The cold snap has hit and just like that, winter is well and truly here.
 
I love chilly weather; eating porridge for breakfast and getting my hygge on … for the first day. Then the novelty wears off!

PS: Thank you! My last newsletter seems to have resonated with many of you with elderly parents. A huge thanks to those who contacted me. It was lovely to hear from you all. My father is back home and regaining his energy after contracting pneumonia while we were overseas. He’s only just beginning to realise how lucky he is!

Recipe Colcannon (vegan and omni versions)


Colcannon is a traditional Irish dish starring potatoes and cabbage, which is super satisfying on a cold night. Serve as a side dish with your favourite protein or stew. I love it with vegan sausages or smoked fish. This version is dairy-free, with non-vegan additions if desired.
