Wow another beautiful weekend, loving this long run of sunshine right now. I will adjust the exercise in class on warm days and we will do more toning so no staying away because it's warm!

If your Annual Summer break has historically always been your downfall with weight gain that can then take until Christmas to shift .......you can change that this year, really you can, but it means ...

Up your game by continuing with classes, but getting to extra exercise sessions where you can, really focusing on your cleaner eating  or your calorie counting with determination and clarity  about what you want and how you will  achieve it. 
 
So right now, tonight  mark the dates in your diary, BOOK your sessions  and tick off 'looking after myself' on  to do' list

Weight losses and achievments
Well we've had some great weight losses during the month of June.Let's see what we can achieve for July during our challenge!
Much better week with the weight losses.As a club last week we managed to lose 91lbs which works out to be 6 and a half stone,well done everybody,let's keep the momentum going!

Picnic ideas
Planning a picnic this summer? Whether you are heading to a scenic al fresco dining spot or sheltering from a downpour inside, here is all the advice you need on how to pack the perfect picnic basket and avoid any mishaps. 

Checklist for a perfect picnic

  • Freeze fruit juice in ice cube trays then pop the cubes out into an airtight lunchbox. This will keep the food around the container nice and cool – then, once the juice melts, you can pour it into cups, top it up with soda water and drink it.. Or I just use packs of ice in containers to keep food chilled and tip them out when melted into a icebucket to keep my drinks cold.

  • Leafy salads will wilt before your very eyes, especially in the sun. Ditch the green salads and go for chunky crudités like celery sticks and cucumber wedges instead.

  • Keep sauces and dressings separate where you can, to stop things going soggy.

  • Ask all guests to bring a cushion in their own tote bag to sit on. Everyone can sit where they want, instead of having to move the blanket every five minutes to please both the shade chasers and sunseekers alike.

    Flasks aren’t just for tea

    Instead of filling your cool bag with all the drinks, load up a good flask with ice and sparkling water or soda water. Just keep it steady so it doesn’t get too shaken up on the journey. Use to lengthen white wine or add to fruit juice for the drivers and kids.
  • Bring a jar of salad

    While it seems like a bit of a fad , serving salad in a jam jar makes a lot of sense. The idea is that the dressing goes in first, gets trapped at the bottom and gently marinates anything around it, so choose a robust ingredient like chickpeas, feta or griddled veg for the first layer. Then fill up the jar with the more delicate ingredients, like fresh herbs, at the top.

    To serve, tip out into a bowl or serving platter so the dressing gets drizzled over the top of the salad.
    You could also make individual desserts in a jam jar like cheesecakes.


    Pack a dipping sauce

    Make a simple and versatile dipping sauce in a jar or tub with a well-fitting lid – great for wedges of cucumber, or perking up a mini Scotch egg.

    Mix the juice of 1 lime with 1 tbsp golden caster sugar, 3 tbsp fish sauce and 1 finely chopped red chilli. Just before you leave the house, add an ice cube.


    Courgette frittatas

    Our tasty courgette frittatas are quicker to make than a quiche and made in individual muffin cases for easy serving.

  • Heat oven to 220C/200C fan/gas 7, then put an empty muffin tin inside.
  • Coarsely grate 1 large or 2 small courgettes and slice 4 spring onions.
  • Heat 2 tsp rapeseed oil in a frying pan and fry the spring onions for about 3 mins.
  • Stir in 1 crushed garlic clove and the grated courgette and cook for another 1 min, then set aside to cool.
  • Meanwhile, beat 3 large eggs in a jug with a good pinch of dill fronds and 4 tbsp Greek yogurt, then season.
  • Stir in the fried courgette mix.
  • Take the muffin tin out of the oven. Divide the mixture between eight muffin cases and bake for 15-18 mins until set and golden.
     

No more soggy sandwiches

How do you make the best picnic sarnie? Make an absolutely massive one!

The French have it absolutely nailed with the pan bagnat. That’s a crusty boule or baguette loaf, cut in half, the middle ripped out, then stuffed with boiled eggs, tuna, tomatoes and olives. Make it your way with layers of your favourite cheeses, cured meats, tomatoes and soft herbs like basil or chives, 

Once assembled, wrap tightly with parchment and tie with string. Pop it in the fridge overnight with something heavy on top, or pack in the bottom of the cool box to press the layers together. Cut into wedges or slices to serve.

Healthy carrot cake muffins - Ideal for picnics
Make these delicious healthy carrot cake muffins for a lunchbox snack or mid-afternoon treat. They're easy to make and can be frozen for later too.

Cooking Time 15mins
Calories 129 each
 
Ingredients
  • 200g plain wholemeal flour
  • 2tsp baking powder
  • 1tsp cinnamon
  • 1 large pear, grated
  • 1 medium carrot, grated
  • 50g raisins
  • 50g Natvia granulated sweetener
  • 2 eggs
  • 3tbsp sunflower oil
  • 150ml skimmed milk
Method
  1. Heat the oven to 190°C/fan 170°C/gas 5. Line a 12-hole muffin tin with paper cases.
  2. Put the flour, baking powder and cinnamon in a large bowl. Add the pear, carrot, raisins and sweetener, then stir into the flour mixture. Whisk the eggs, oil and milk together in a large jug. Add to the bowl and stir until just combined.
  3. Divide the mixture among the muffin cases.
  4. Bake for 15–18 min until golden and just firm. Set aside to cool for 5 min in the tin, then transfer to a wire rack to cool completely.
TIP To freeze: Wrap the muffins individually in plastic wrap and freeze for up to one month.

My Final Thought...
We live in a world where, sadly far too many people only do what they have to do to get by ................. 
Do you ever get thoroughly fed up with the bad service you receive from people who ought to treat you better?
Those shop assistants who simply refuse to interrupt their conversation to serve you ............ and appear to have been on a special training course to learn how to carry on their conversation and take your money whilst completely ignoring you.
That cashier at the bank who, on being asked what you consider to be a simple question points to the telephone on the wall so you can ask someone somewhere in India.
The waiter who, very proud of the fact that he/she has managed to get all your food to your table whilst not saying a single word all evening, still expects a tip for interrupting his/her very busy social life by coming into work especially for you.
So many of us though, take this attitude with our weight loss. We only do the bare minimum. We do just enough to keep our weight the same, or maybe on a good week go for that whole half pound. The really sad thing is that this leads us into a downward spiral. The less successful we are, the less successful we expect to be. 
Our expectations become lower and lower, until we get to the point where we're stepping on the scales, we're a pound heavier and we congratulate ourselves that it's not more.
Success isn't measured by the end result. Success is about knowing that you tried your best. Weight loss requires effort and perseverance, but most of all a belief that you can do it. I believe you can do it. Maybe you should believe it too !!
