Cherry Clafoutis
Yields 8-10 servings
Ingredients
1 tablespoon butter
1/2 cup sugar
3/4 cup flour
1 cup heavy whipping cream
1/2 tablespoon vanilla
3 eggs
1 pound cherries, pitted
Powdered sugar (optional)
Preheat oven to 375 degrees. Butter an ovenproof 10" round dish.
In a mixing bowl, whisk together the sugar, flour, cream, vanilla, and eggs. Arrange cherries in an ovenproof dish. Pour the batter over the cherries. Bake for 15-20 minutes, until browned on top.
Dust the clafoutis with powdered sugar, if desired. Serve the clafoutis warm or at room temperature.
