Vendor Spotlight: Mindful Mushrooms



In seasons past,one of the most requested items at the market were mushrooms! We are thrilled to have Mindful Mushrooms with us this season with their array of colorful and affordable mushrooms! The owner, Riley  believes that mushrooms are vital in life's sustainability and have properties that can fight various ailments and diseases.  He believes that incorporating a diversity of mushrooms in your diet may lead to longevity and enhance your quality of life.  Riley grew up in Melbourne, FL.  He attended Florida State University, where he received his Bachelors of Science in Nutrition.  It was during this time that Riley came to the realization that food is truly medicine.  Post college, he drove cross country to Salt Lake City, UT for an herbalist apprenticeship program and began to step away from western medicine.  He then traveled to California and while working for the Whole Body Department at Whole Foods, was selected to be one of two employees sent to see Paul Stamets speak.   This sparked his fascinating journey into the world of mycology.  Riley moved to Portland and learned more about foraging and the identification of mushrooms.  He did extensive research on mushroom cultivation along with their benefits, and started experimenting with the cultivation process.  He wanted to share this knowledge with the community and started a gourmet and medicinal mushroom business.


There are tons of great recipes that incorporate mushrooms in ways people have never thought of and ways that are surprisingly easy. The easiest way to cook mushrooms is to saute them up with some butter/oil, salt, and pepper on medium for 8-12 minutes.  A little fresh garlic and green onion can add some extra flavor. You can eat them on their own or add to pastas, tacos, sandwiches, or stirfrys. The chestnuts and oyster mushrooms also roast very well. For that, leave them whole or shred them up and rub in olive oil. Roast at 400 for 14-15 minutes (less time if super shredded), flipping half way through and keeping an eye on them the last few minutes to prevent burning. Roasting is a great option for folks who have texture issues with mushrooms, as the mushrooms get crispy and bacon-like. For folks who may be fearful of a mushroomy taste, they can marinate mushrooms in whatever sauce they like before sauteing. We've been experimenting with liquid aminos and coco aminos ourselves.  For Lion's Mane, we cut them in thin slices, saute in butter, salt, and pepper resulting in a crab-like flavor and texture. Lion's mane is a very meaty mushroom and is high in protein, so it can easily replace meat in any dish. We've created a pinterest board full of great recipes and will link it below for anyone who needs some help getting creative in the kitchen. Keep in mind that if a recipes calls for a mushroom you don't have, substituting with another mushroom works just as well!  For additional info on the specific nutritional benefits of each mushroom, you can visit our website at
