Hello MIH family,


We hope you’ve been enjoying the various springtime festivities with loved ones. We’ve had an action-packed April, from community classes in schools and youth centres to a visit from Liam Charles (GBBO contestant and early days MIH student!) to make some peng patties.

Looking ahead, we’re spoiling you rotten with some amazing classes including a very special celebrity chef duo class from the BOSH! Boys. Dubbed ‘the vegan Jamie Olivers’ by The Times, this is one cook-a-long you don’t want to miss.

Our special guest webinar this month sees vegan BOSH! legends, Henry and Ian, teach inspiring plant-based techniques to wow your taste buds and your friends. Make the perfect creamy vegan Caesar salad with ‘chicken’ from mushrooms, irresistibly crispy croutons and saucy gnocchi.

This Wednesday join mother/daughter co-authors of the brand new book, Living PCOS Free, nutritionist Rohini Bajekal and gynaecologist, Dr Nitu, for a cooking class curated for hormonal health. Learn to make 3 tasty dishes from their book and learn how to improve your wellbeing.

Jackfruit is all the rage - but how on earth do you cook it? We’ve drafted in chef and nutritional therapist Bruna Oliveira (live from Mexico!) to teach us ways to prep and enjoy this glorious plant. Make spicy jackfruit tacos, chipotle BBQ jackfruit PLUS leave with a recipe pack and tons of tips.

Nothing truly makes the MIH wheels turn like our incredible Community Meal Service team. These volunteers give so much time, love and energy to this project week after week, continuing to turn out over 1200+ culturally diverse, planet-friendly, plant-based dishes to those who need them. Hear about chef Marcus’ MIH story and learn to make one of his favourites, dumplings in a Caribbean red pea stew.

We’ve absolutely adored hosting our six-week cooking course at the Urswick School with two different age groups. Taught by our very own chef Sara, she was enthralled to see that the kids ‘arrived with energy to cook new food they’d never tried, curiosity to learn the importance of the food we eat and plenty of banter to give’! It’s more important than ever to be passing on the skills and knowledge of nutrition to the next generation so we’re honoured to have been a part of this. RECIPE OF THE MONTH:
Chickpea Flour Veggie Muffin

A fantastic way to reduce food waste by using up the veggies in the fridge, these tasty little muffins are also gluten free! We recommend serving with beetroot hummus, and homemade kale crisps.
