Dishes fit for a Queen

Princess Elizabeth became Queen Elizabeth II on 6 February 1952. Seventy years later, the UK will be enjoying an extra bank holiday to mark the occasion of the Queen’s Platinum Jubilee, and it falls on Friday 3 June. 
 
A national competition was held to design a platinum pudding for the jubilee celebrations. Inspired by this, we ran a competition among World Cancer Research Fund staff to come up with the best healthy celebratory recipe.

The winner was aubergine curry, created by Freya in our Fundraising team. She writes: "This recipe is a true celebration of store cupboard ingredients! One night, I went to make dinner and all I had in the fridge was an aubergine and an onion. I teamed them with canned tomatoes, long-life coconut drink and spices from my cupboard and this simple but delicious recipe was born!"
