"Summer veggies are here!"
 
Edible Campus UNC is a program of the North Carolina Botanical Garden that creates working landscapes across UNC-Chapel Hill to facilitate campus community engagement in topics of food and agriculture sustainability. 

Workday Updates

Our campus gardens are in full bloom! Come check out all the produce that has grown over the past few weeks. The main garden is full of eggplant, zucchini, okra, peppers, basil and (soon) tomatoes. Our figs are also starting to ripen. You can find fig trees at the Main Garden, outside Lenoir, and by Stacy and Hardin. If you are ever passing through campus, take a minute to see what's growing. 

During our workdays, we have been busy propagating mint, rosemary, and tomatoes. We have also been working hard to keep all of the garden beds well maintained and watered. Pesky weeds and tomato suckers can take up a lot of our time! We appreciate everyone who has helped keep the gardens beautiful this 
summer.

 Workdays

Our workdays this summer are every Monday and Thursday from 3:00-5:00 pm @ the Edible Campus Main Garden behind Davis Library.

Poem of the Month
"From Blossoms" by Li-Young Lee

 
From blossoms comes
this brown paper bag of peaches
we bought from the boy
at the bend in the road where we turned toward
signs painted Peaches. 

From laden boughs, from hands,
from sweet fellowship in the bins,
comes nectar at the roadside, succulent
peaches we devour, dusty skin and all,
comes the familiar dust of summer, dust we eat.

O, to take what we love inside,
to carry within us an orchard, to eat
not only the skin, but the shade,
not 
only the sugar, but the days, to hold
the fruit in our hands, adore it, then bite into
the round jubilance of peach.

There are days we live
as if death were nowhere 
in the background; from joy
to joy to joy, from wing to wing,
from blossom to blossom to
impossible blossom, to sweet impossible blossom.  

Carolina Cookbook

In the Spring and Summer of 2020, the Edible Campus team, in partnership with Carolina Cupboard and APPLES, created Carolina Cookbook: A College Student's Guide to Healthy, Affordable & Seasonal Eating at Carolina. The cookbook contains quick, healthy meals that can be made using seasonal ingredients you can obtain from Carolina Cupboard and/or the Edible Campus Gardens. 

The current dish being featured is Oregano Pesto Pasta, which is a simple, but tasty meal! This recipe takes around 10 minutes to prep and 10 minutes to cook.

Ingredients
Garden: 1 cup fresh oregano, 2 garlic cloves, 1/2 cup raw onions  
Cupboard: 1/2 cup parmesan, 1/2 cup olive oil, salt to taste 
Directions
1. Cook pasta al dente and drain.  
2. Add all ingredients but olive oil into a bowl and grind until slightly combined. If you have a food processor, you can use that! 
3. Once slightly mashed, stream in the olive oil and continue grinding until smooth. 
4. Combine pasta and pesto and toss thoroughly until combined.
5. Enjoy! 

Compost
Did you know Edible Campus accepts compost donations at the Main Garden behind Davis Library?  Your food waste will be converted into usable compost for our Main Garden and satellite beds once it is finished curing. Be sure to deposit your food waste in the active bin!
