MID JUNE

A time of sneakers and sauces. At one point in the early 1900s, the Puget Sound strawberries were so famous that the German Kaiser ordered a barrel of them to be shipped to him. They were packed in sponge moss. And for a moment the Smith Tower, in 1915, was the fourth tallest building in the world.

At this moment, you can make a rhubarb sauce and a strawberry sauce, and use them for yogurt and ice cream, biscuits and buns, and as a kind of keeping time piece.

For the rhubarb, wash two good stems and chop them to half-inch pieces, about two cups. Heat a good medium saucepan, or Creuset, add 1/3 cup of sugar, a little less water, bring to a soft boil and add the cut up rhubarb and the zest of one lemon. Stir and keep at a slow boil for ten minutes, until it thickens. Let cool and refrigerate in a tight jar, it will keep for a good week but you should have used it by then.

For the strawberries, hull and wash two cups worth of the newest, reddest, even softest berries. Leave them wet and add to the saucepan with 1/3 cup of sugar and the juice of 1/2 a lemon, and bring to a soft boil on medium. Turn down the heat and keep stirring until they thicken, about ten minutes. Let them cool, then store what you are not ready to use in a tight jar. Will also keep for a good week, but you should  by then have used them and be making more.
