VEGGIE LIST
Radishes
These bunched radishes will be round and red with maybe a few purple radishes.

Romaine Lettuce
You will get 2 medium sized romaine lettuces.

Super Spinach Mix
This is a mix of your classic green spinach with deep purple amaranth mixed in.

Dill
A bunch of green leaf dill

Spicy Lentil Sprouts
These sprouts are not spicy as their name says but they are flavorful and sweet

RECIPE OF THE WEEK

Ingredients

  • 2 romaine lettuce hearts, thinly sliced
  • 4-5 scallions, thinly sliced
  • ¼ cup fresh dill, finely chopped
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon finely chopped mint

The Dressing

  • 1/2 cup or  olive oil
  • 3-4 tablespoons red wine vinegar or lemon juice
  •  A pinch of salt
  • 1 teaspoon dried crushed oregano

Instructions

Combine all of the dressing ingredients in a bowl and whisk together until emulsified. Set aside. Combine all of the remaining salad ingredients together in a large bowl and top with the dressing. Toss together to coat. Serve immediately with toasted bread. Enjoy.

Side Notes
Add some cucumbers and feta cheese to the salad for extra flavor. Make the salad dressing up to a week ahead of time and keep it stored in an airtight container in the refrigerator until ready to use. Mix together and pour over the greens right before serving.

Farm Happenings
This is our third year doing our Super Spinach Mix. It is our way of folding people into eating new foods that one day may become more common place as the weather shifts. Amaranth has a beautiful deep purple color and taste very similar to spinach but can handle much more heat and drought. It also can produce grain (seeds) that are really good for you. We hope you enjoy this mix !
This past week we got a good helping of rain that has really boosted the garden. On the right here is our dill planting that will be picked for leaf dill and some left to seed heads for our picklers out there! I really love growing dill because it attracts the beautiful swallowtail caterpillar that is often mistaken for the monarch caterpillar. If you get a chance to google them, they are pretty neat looking!
And lastly here to the left it a picture of a happy bumblebee enjoying the beautiful sage flowers. Herbs have been a key component to the farm because they inspire cooking, healthy digestion and provide flowers for beneficial insects on a yearly basis. We are also able to dry what is not used, just by simply hanging them in a brown paper bag for a couple weeks, enabling us to have herbs year round. We really encourage you to try it out! :)
