RECIPE OF THE WEEK

Ingredients

  • 2 lbs zucchini
  • 2 lbs yukon gold potatoes (small - same diameter as zucchini)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried oregano
  • 2 cups heavy whipping cream
  • 1 1/2 cups shredded Parmesan cheese
  • 2 garlic cloves minced
     

    Instructions

    1. In a medium bowl, stir together 2 cups cream, 1 cup Parmesan cheese, 2 minced garlic cloves and 2 Tbsp chives.
    2. Thinly slice 2 large zucchini into 1/4” thick rings. Zucchini should be sliced thicker than potatoes. Very Thinly Slice potatoes into 1/16” thick rings. Transfer sliced zucchini and potatoes to a large mixing bowl and season with 1 tsp salt, 1/2 tsp black pepper and 1/2 tsp oregano.
    3. Layer vegetables in the 9x13 casserole dish, alternating with zucchini and potatoes. You can double up potatoes here and there since there will be more potato slices than zucchini.

    4. Pour cream mixture evenly over top and sprinkle with 1/2 cup Parmesan cheese. Bake uncovered at 400˚F for 40-45 minutes, or until potatoes are soft and easily pierced with a fork.* Remove from oven and rest at least 10 minutes. Garnish with more chives if desired and serve.

Farm Happenings
We are so close to the tomatoes, cucumbers and beans to being ready! I feel like I have been waiting forever. Haha! We even started the tomatoes significantly earlier this year but it seems they will arrive when they always do. One day I will crack the code. Our winter squash looks un- phased by its initial bug pressure and have fully overcome it, knock on wood! I have notice a huge difference in our butternut varieties this year so I am excited to see what kind of yields we get from them. We grow some pretty awesome varieties!
We decided to grow some new to us tomatillo varieties this year and have give them cages to help keep them from flopping all over the place. We got some huge down pours and a bit of hail in that last rain we got which has given a boost to a lot of the crops but also to the weeds, so the beautiful kept fields are no more. haha. I thought for sure that this was the year we keep things under control! Not to worry all the crops are well established so a bit of weed pressure at this stage of that game is not as much of a concern. Happy eating!
