Zucchini is back on the menu! Tis the season!

Eggplant
If you don't like eggplant let me know and I will swap it out

Tomatoes
We will do another teaser portion of tomatoes again this week.

RECIPE OF THE WEEK
This is Emily's Favorite Broccoli Dish that she LOVES! So since it is her broccoli I thought we should share the way she likes to use it!
 
Salad
  • 5-6 cups broccoli florets¹ 1 lb, this was about 2 ½ heads of broccoli for me (450g)
  • 1 cup sharp cheddar cheese thicker, not finely shredded (115g)
  • cup dried cranberries (85g)
  • ½ cup crumbled bacon² (60g)
  • ½ cup salted sunflower seeds (60g)
  • cup red onion diced into small pieces (50g)

Dressing

  • ¾ cup mayo I use olive oil mayo (175g)
  • ¼ cup sour cream³ (70g)
  • 1 ½ Tablespoon white wine vinegar⁴
  • 3 Tablespoons sugar (40g)
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions

  • Combine broccoli florets, cheddar cheese, dried cranberries, bacon, sunflower seeds, and onion in a large bowl.
  • In a separate, small bowl, whisk together mayo, sour cream, vinegar, sugar, salt, and pepper until smooth and well-combined.
  • Pour dressing over broccoli combination and toss or stir well.
  • Broccoli salad may be served immediately, but for best flavor refrigerate for at least one hour before serving. Make sure to toss broccoli salad thoroughly again before serving.
     
    Keep refrigerated if not consuming right away.

Farm Happenings
Me and Caitlyn had a great last week working together and once she gets settled into school she will see where she can help out at the farm. She was truly a blessing on the farm. She kept our spirits high and made us feel like youngins' again. haha. We got lots of rain Friday and are expecting more on Tuesday from tropical storm 'Henri'. Let's hope it's not too crazy! With that said I will be picking shares tomorrow to ensure I can get everything, some crops can't be picked in the rain such as tomatoes and beans or you risk spreading diseases.
I now have more zucchini than I know what to do with so please don't hesitate to ask for extra! ;) We started our weekly food bank donation at the beginning of this month and I am pretty sure they are going to ask us to stop bringing zucchini! haha! We are shifting back to not attending the Wolfville Farmers Market on Saturdays and just moving our extra food through the food bank and WFM2go and of course the CSA too! The market has not really picked up for us and that is OK because the way our farm is set up is more focused on providing food through the CSA. With that said we always have more food and so we are thinking of building a little food stand at the top of the farm road for next year that I am really excited about because I can make it all cute and stuff! <3
