Any given semester Bill Gates comes out with a book for us to read. His latest suggestion is Vaclav Smil's Numbers Don’t Lie

Inside you can find many interesting ideas, but I'll tell you one unexpected. Have you tried food like Impossible burgers, and other vegan meats? I thought they were the future, or at least a more sustainable future. But I was wrong.

Smil says that "flooding the markets with fake meat made from altered legume proteins" is not that good for the environment. 

Why? Because more crops mean more Nitrate (bad for the planet) and because that wouldn't cut out the real problem, food waste: 30% due to not being used in time, 15% because too much was cooked or served and the rest lost for personal preferences, fussy eating or accidents.  

Many of us follow a vegan Monday rule or are mighty vegetarian, or 100% vegan. Good. What if the real extra mile would be not about what you eat but about how much you do waste?

PS: Every time we trash food we cause soil erosion, nitrate leaching, loss of biodiversity and the growth of antibiotic-resistant bacteria. Food waste is in fact responsible for as much as 10% of global greenhouse gas emissions. Boring newsletters get close to that 10%, I know.
PPS: the book also explains why different breeding could mean much more meat in a more human way, but I'll spare you that today.

This one, dated 2016, was presented like this: "A Super Upsetting Cookbook About Sandwiches will make you laugh, make you cry, and most of all, make you hungry". Kelsey Miller made me remember this book with one post and the chapter when Kord presents us an asparagus sandwich served with a lesson on how great cooks can cook basically gravel or ugly stuff and make that delicious. Like chef says: "It's important to achieve balance in sandwiches, because who really knows how to achieve it in life?".
