Pac Choy
2-3 Heads of Medium Pac Choy. Wonderful Stir-fry green!

Sweet Dumpling Squash
Another round of winter squash. This variety is called "Carnival". It is sweet and nutty!.

Swiss Chard
One bunch of white or red swiss chard

Apples
6-8 Mixed apples best used cooked. Great flavor. Make apple sauce, add to oatmeal, make a pie

Beans
Mostly french green beans but some may be multicolored

Tomatoes
Mostly cherry tomatoes some may get slicing tomatoes

Carrots
A bunch of orange or red carrots.

RECIPE OF THE WEEK
Ingredients
  • 4 cups Sweet Dumpling squash (diced into 1/2 inch cubes)
  • 2 cups Arborio rice
  • 2 cloves garlic (minced)
  • 4 shallots (finely chopped)
  • 2 tbsp butter
  • 3/4 cup grated parmesan cheese
  • 1/2 cup white wine (dry)
  • 6-8 sprigs fresh thyme (destemmed)
  • freshly ground pepper
  • salt
 

Instructions
 

  • Season squash with salt and pepper and sautee over medium heat for 3 minutes. Add a small splash of white wine and continue sauteeing for another 3 minutes. Place in a bowl and set aside.
  • Sprinkle garlic and shallots with a pinch of salt and sautee in butter over medium-low heat until fragrant and soft.
  • Add rice and fry for about 4 minutes. Add the remaining white wine and cook until evaporated, about 2 minutes.
  • Slowly stir in 1 cup of broth and add the thyme. Stir constantly for 5 minutes (or until broth is absorbed).
  • Add more broth 1/2 cup at a time, continuing to stir constantly, until all broth has been absorbed.
  • Add the squash and stir for about 1 minute.
  • Reduce the heat to low and gradually sprinkle the parmesan cheese while stirring.
  • Serve with more parmesan and freshly ground pepper.

Farm Happenings
Hope everyone is well! I know it has been a busy time of shifting gears for a lot of people this past week. On the farm it has mostly been harvesting lot of veggies, starting the fall clean up around the farm and just general avoidance of weeding. Haha! We grew a lot of different herbs for winter teas this year that we have been drying in a dark and dry place. We have started filling up our freezer with second tomatoes and chopped up greens for winter soups! I am so looking forward to winter this year. It is an important time for re-calibrating as farmers and while two years ago we thought we finally had the farm plan down pat we are getting ready for another big shift. Really though, that's life!

Emily Tebogt & our farm is going to be taking over WFM2go's winter CSA so that WFM2go can focus on other ideas. It has been so awesome of them to take inatitve and keep the CSA model going year round when we couldn't, but with the help of my bestie Emily we are going to give it a go. We will send out info for it around Mid-October. I am really excited to keep in touch with some of you year round. And remember you can always email us with ANY questions!
