Is The Weather Going To Change???

Welcome to your weekly flash letting you know whats in abundance in our fridges - ready for the week ahead.

This week holds magical things as Fresh Girolle, Chanterelles, Pmpkins & lots of other amazing flavours are available.

Fresh Fruit

Autumn can be an exciting time for fruits as we see an influx of what we call falling fruit. Apples, Pears, Plums, Quince, Figs the list goes on. This week we can all get excited about plums but let's not forget the amount of UK soft fruit still available. Yorkshire Strawberry, Raspberries & Blueberries are still arriving every day to excite.

Discovery Apples

Oh, what an apple!!! This white-fleshed apple holds crisp meat with a sweat and a genuinely delightful flavour profile. Perfect as an eating apple or excellent through a salad.

Fresh Quince

The wait is over… Fresh new season French Quince has arrived. The season will be here for about nine weeks, then it will disappear for a short period. So enjoy it while you can.

Russet Apples

The KING of the UK apple. What actually does the word Russet mean ?? The word Russet is all about the skin texture of the apple, although these traditional apples hold great flavour with a yellow-tinged flesh.

French Pumpkins

Why is pumpkin in the fruit section??? Well a pumpkin is actually a berry. That's one to remember!!! The French Muscade pumpkin has deep, bold orange flesh with fantastic flavour - In stock and ready to use NOW…

Autumnal Flavours

It wont be long for UK moonshine pumpkins to arrive but onion squash is here now if you cant wait for some squash action.

Although it still feels like summer, Autumn has arrived so get planning for those long braised dishes and earthy flavours as its a great time for our creative minds to spring into action - Who’s got beef cheeks back on the menu ??

Fresh Girolles

The chefs favourite wild mushroom… One thing we should never forget is that a girolle is a wild mushroom that's hand foraged from deep in the woods. Grading for size is done by eye, and although excellent for many things, we should respect their wild nature.

Purple Potatoes

When was the last time you had purple potatoes on your menu? These are genuinely creative and can be used in many ways. Grated to make purple rosti, purple mash, chips pomme anna, the list goes on.

Gourds

Decorative gourds are perfect to dress up the front of house. TOP TIP varnish them and they won't rot!!! Don't try and cook with them as they are rock hard but look fantastic

Leaf Celeriac

Grown in Lancashire, this celeriac is straight from the farm to your kitchen door. Still encompassing the leaf and all that beautiful flavour, make sure you put them to good use.
