At Jenolan, Chisolm’s Restaurant, has been a grand dining room since 1916. Next time you dine at Chisolm's, look around. Of all the rooms the in heritage-listed Caves House hotel, Chisolm's has the most fascinating history. The room has not changed structurally, since its earliest days. Many architectural features, such as the ceiling, are original, unchanged since the Duke and Duchess of York visited in 1927. Some furnishings also have fascinating stories to tell.
Then there are the personalities that are associated with the room. Did you know that the architect was the same man who designed Sydney's Queen Victoria Building? And the manageress, who served Caves House for nearly 30 years, is now rumoured to haunt the restaurant - believe it or not! Our current Executive Chef may also one day take his place in the Jenolan 'hall of fame', if he continues to create great dishes from locally sourced ingredients, such as his delectable 'Slow braised Black Angus scotch fillet (240g) Bourguignon of red wine, thyme, mushrooms and onions, served with mashed potatoes and broccolini.'
