It's Radicchio Week!
We're big fans of the Chicory Family, Radicchio being our most successful Chicory crop and the one we're celebrating this week. They're wonderfully bitter and sweet crunchy fall greens that are also a beautiful addition to salads and cooked dishes.
We're not alone in our Chicory Love! Both Vermont and Seattle are currently celebrating Chicory Week ... check out their websites for more recipes, a deeper dive on all things Chicory, and mouth watering photos and videos (including "RADTV", a YouTube series dedicated to growing and eating Radicchio).
We're going to start with Amber's go-to for Radicchio, a salad combining raw or broiled Radicchio with blue cheese and walnuts, and Sheryl recommends this Kale, Radicchio, and Farro salad (topped with Micros of course!). Here's a whole bunch of terrific recipe ideas for Radicchio, keeping in mind that cooking will reveal more of its sweetness.
