Wild about Wensleydale!

We've teamed up with the fabulous Elizabeth at Humble Pie Cookery Kitchen in Hawes to bring you a two night, dinner, bed and breakfast stay with a days cooking in her fabulous kitchen.

Her 'Wild about Wensleydale' course includes a welcome scone and coffee, light lunch and you get to take away everything you make including*:

 

Fruit Loaf infused with Askrigg Ale
Quiche with Real Yorkshire Wensleydale Blue Cheese
Apple Pie with Real Yorkshire Wensleydale Cheese 
Elizabethan Wensleydale Lamb or Wensleydale Lamb Hot Pot

A Right Rum do!
We have been busy down at the Leyburn Distillery not only producing our award winning range of London Dry Gins but also creating a unique Wensleydale Spiced Rum!

The base of our rum is fermented molasses. Molasses are slow to ferment but the taste is amazing. Sugar cane syrup is very quick to ferment, but the taste is weak. For us, the taste sensation is everything,

Once fermented, our Wensleydale Spiced Rum is double distilled in alembic copper stills, where we add a subtle combination of honey, cocoa, vanilla, mandarin zest, fresh ginger, black pepper, and cardamom, producing a beguiling and accessible taste sensation. Except for the honey and vanilla which do not process well, no other botanicals are added post-distillation. The skill is balancing the botanicals to ensure that the taste journey is optimised, each note having the correct intensity and hitting the palette at the right time to achieve the precise taste experience when drunk.
