The metamorphosis of a caterpillar into a butterfly symbolizes transition and rebirth, which the estate perfectly illustrates by becoming the emblem of a preserved biodiversity, recognized for its organic farming practices. 
Perfectly located among the green hills of Provence, Château de l'Escarelle's vineyard is forever evolving and renewing itself.

Château de l'Escarelle's 100 hectares of vines flourish in the midst of 1,000 hectares of stunning, protected countryside in the very heart of Provence. Less than an hour's drive east of Aix-en-Provence, the estate is famous for its beautifully aromatic and enticing dry Rosé wines that are made from a blend of Grenache, Syrah, and Cinsault. The vines are planted in limestone soil on terraces separated by dry-stone walls at an altitude of up to 500 metres, naturally following the shape of Escarelle's hills and the Montagne de la Loube. This variation in altitude contributes to the terroir's special character, enabling the vinification of very expressive, aromatic wines.

Yann Pineau, French businessman and environmental advocate, purchased the estate in 2014. Passionate about wine, Yann is also deeply committed to preserving the unique natural environment of Château de l'Escarelle. Since purchasing the estate, he has made a significant investment in the property by updating the winery and initiating the process of converting the entire estate to organic farming, obtaining organic certification in 2020. Escarelle's first certified organic wines were released in 2021.

Château de l'Escarelle currently holds the Haute Valeur Environnementale certificate (HVE), France's most stringent environmental certificate.
In the autumn of 2015, the team at Château de l'Escarelle began building a new storehouse. The premises boast the very latest technology, operating alongside their more traditional winemaking facilities and cellars.

To their great surprise, during the building work, they uncovered two statues depicting a couple of cheerful cherubs! Their rosé wine "Les Deux Anges" (the two angels) draws its inspiration from these statues.
