Several years ago, our YMCA partnered with the Hawaiʻi Conservation Alliance to expand their web-based tool that connected people to environmental volunteer, learning and career opportunities across Hawaiʻi.

Our Y added a family friendly search tool for keiki, families, and people of all ages to get together, connect to nature, and make a positive impact for the future.

Today, Conservation Connections.org is a one-stop source for anyone looking for opportunities to work, volunteer, intern, research, or donate to organizations that are doing great work stewarding the land, ocean, and cultural sites of Hawaiʻi. 

Take a look and you'll find dozens of wonderful opportunities to help care for, appreciate and learn about our culture and 'aina and, in the process, benefit your own well-being in mind, spirit and body!

Bi Bim Bap Stuffed Peppers

Notes:
Gochujang Paste
This is a thick and spicy/sweet paste commonly used in Korean food. It provides the needed “umami” flavor in many recipes.

Liquid Aminos
A great, healthy soy sauce alternative that can be found in most grocery stores in the condiments section. 

Agave Nectar
A delightful liquid sweetener to use in replacement of processed sugar that has a very neutral taste.

Rice Vinegar
A type of vinegar created from rice. 

Let's Eat Some More!
Purple Potato Poke Salad

Serves 6 -8

Ingredients
  • 2 pounds Okinawan sweet potato
  • 4 ounces fresh seaweed (ogo or limu)
  • 1/4 cup sea asparagus, roughly chopped
  • 1/4 cup chopped green onions
  • 1 tsp roasted sesame seeds
  • 1 cup chopped green onions
  • 5 TBS fresh ginger, minced or grated
  • 1 cup vegetable oil
  • 1 tsp sesame oil
  • Rock salt to taste
  • Lettuce or ti leaves for plating
  • Fresh seaweed for garnish


Instructions

  1. Boil potatoes until tender, yet firm, about 20 minutes. Chill. Peel (or you may keep the skins on) and cut into bite-sized pieces. 
  2. Blanch seaweed in boiling water for less than one minute. Drain, chill and chop. 
  3. Mix potatoes with seaweed, sea asparagus, green onions, sesame seeds, ginger, oils and salt to taste. 
  4. Plate potatoes on a bed of lettuce or ti leaves. 
  5. Garnish plate with chopped fresh seaweed.
